This is my original recipe for super-granola bars that may actually be good for you.  I've combined lots of heart-healthy ingredients with a little sweetness.

They are fairly high-calorie, mostly from the monounsaturated nut oils, so eat them sparingly.

Bob's Chunky Squares

This recipe produces roughly two pounds of bars.

  • 1 cup maple syrup
  • 2.5 cups water
  • 1/2 cup prunes
  • 3/4 medium apple, cored
  • 1 cup almonds
  • 1 cup walnuts

Blend all ingredients for 5-10 seconds so they're still a bit chunky.

Transfer the blended slurry to a big bowl.

Add:

  • 1.5 cups textured soy protein "TVP"
  • 3/4 cup sunflower seeds
  • 1 cup pancake mix
  • 3/4 cup cornmeal
  • 1.5 cups rolled oats
  • 3/4 cups rice flour

Mix thoroughly and let sit covered at room temperature for about an hour.

Spread on oiled cookie sheet. My mix ends up about 1/2" thick on two 12" x 18" sheets.

Bake at 350-375 for about 45 minutes. Check frequently!  The top will not brown, but will get somewhat hard from dehydration.  I usually poke at it to check consistency.

Cut into squares while still hot.

Keep refrigerated, and in a container.  The bars will become a science project otherwise.
